Reading a two-digit value without the table
Multiply the first digit by 16 and add the second. That is the entire method, and with the sixteen digit values known it is fast enough to do while reading.
C8 → 12 × 16 + 8 = 192 + 8 = 200 7F → 7 × 16 + 15 = 112 + 15 = 127 A0 → 10 × 16 + 0 = 160 + 0 = 160

Frequently asked questions
What is FF in decimal?
255. It is the largest value a single unsigned byte can hold.
What is 80 in decimal?
128. Only the top bit of the byte is set, which is why it means -128 when read as signed.
How many values fit in one byte?
256, from 00 to FF. That is 2 to the power of 8, counting zero.
How do I read a two-digit hex value quickly?
Multiply the first digit by 16 and add the second. C8 is 12 times 16 plus 8, which is 200.
Why does the table stop at FF?
Because FF is one full byte. Larger values are combinations of bytes, and the same sixteen digit rules apply to each pair.
What is 3E8 in decimal?
